The quality and safety of dairy products are the main criteria in the process of making a purchase by the Russian consumer. A high and stable level of product security is the way to firmly consolidate the organization in the market and increase the level of competitiveness.<\/p>\n<p>Buyers of dairy products rightfully pay close attention to food safety issues. The HACCP system (Hazard Analysisand Critical Control Points \u2013 a risk analysis and critical control points) is a concept that provides for the systematic identification, assessment and management of factors that affect significantly product safety. In order for this system to function effectively and be supported by the management of dairy farms, it must be designed, developed and implemented at the administrative level, and included in the basic management processes.<\/p>\n<p>The article provides an assessment of the current production situation in a specific organization of APK OJSC Kaluga Niva, and a quality and food safety system for a dairy farm is developed and justified.
