To identify the goals and objectives of catering enterprises a comprehensive analysis of the internal (micro) environment of the enterprise is used. Planning in the food industry allows not only to develop the business from the inside, but also to attract investors, partners and credit resources. A business plan is a guide to action and execution and must meet SMART criteria (specific, measurable, achievable, meaningful, time-limited). The strategic map in the coordinate system Training \u2013 Processes \u2013 Customers \u2013 Finance was developed on the example of the projected enterprise of the public canteen. SIPOC-analysis of the projected enterprise of public canteen at the sales stage was carried out. This analysis makes it possible to analyze the process from consumers of secondary results to its initiators. Economic tools, such as pricing and planning, need to be used to manage the internal environment of a food business.
